Prestigious Rôtisseurs plaque awarded to the Le Biff restaurant at Holiday Club Saimaa

The Le Biff restaurant at Holiday Club Saimaa has been awarded the prestigious plaque of La Confrérie de la Chaîne des Rôtisseurs indicating high gastronomic quality. The plaque will be bestowed on the restaurant on Friday, 6 October 2017.

Sign of high quality

To be awarded the plaque, a restaurant must meet extremely high quality requirements. The venue must be unique, and the menu must be high-quality and diverse in terms of ingredients and preparation methods. The wine list must support the menu and include wines of varying ages, from various regions and made with different grapes. While all staff members are expected to possess great culinary and service skills, two of them must be professional members of the Chaîne des Rôtisseurs. At Le Biff, Head Chef Juhani Ellonen holds the highest title bestowed by the organisation, Maître Rôtisseur. Also working at Saimaa are Chef Rôtisseur Carl Lucas as well as Mari Heikkinen and Laura Valkonen, both of whom hold the title of Chef de Table. All in all, 76 Finnish restaurants have been awarded the plaque.

Confrérie de la Chaîne des Rôtisseurs is an international gastronomic society with headquarters in Paris. The history of the society can be traced back to 1248. The French Revolution interrupted the society’s activities until it was re-established in 1950. Today, the society operates in approximately 100 countries. The activities of the society focus on gastronomy, preservation of food culture and honouring dining customs. The aim is to bring together gastronomy enthusiasts and professionals worldwide.
